Method

  1. Heat the olive oil in a large 5-quart pot over medium heat until shimmering.
  2. Add the onion and cook for 6 to 7 minutes, stirring occasionally, until softened and golden.
  3. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  4. Add the cumin, cinnamon, turmeric, and cayenne if using, and stir constantly for 1 minute to toast the spices.
  5. Add the diced tomatoes and cook for 2 minutes, stirring, scraping up any browned bits from the bottom of the pot.
  6. Pour in the vegetable broth and add the sweet potatoes, chickpeas, and salt.
  7. Bring to a boil over high heat, then reduce the heat to low, cover partially, and simmer for 20 to 25 minutes, stirring occasionally, until the sweet potatoes are tender when pierced with a fork.
  8. Uncover and simmer for an additional 5 minutes if the stew needs to thicken, mashing a few sweet potato chunks against the side of the pot to help thicken the broth naturally.
  9. Stir in the spinach and cook for 2 minutes, just until wilted.
  10. Taste and adjust salt and spices as needed - if it tastes flat, an extra pinch of cinnamon or cumin often does the trick.
  11. Ladle into bowls and top each with a dollop of plain yogurt and a sprinkle of chopped cilantro.

Tips

  • Toasting the spices in the oil for a full minute before adding liquid brings out much more flavor than just dumping them into the broth.
  • Mashing a few chunks of cooked sweet potato against the pot is an easy way to naturally thicken the stew without any flour or cornstarch.
