Method

  1. Preheat the oven to 375 F and lightly grease a 9x13-inch baking dish.
  2. Toast the guajillo and ancho chiles in a dry skillet over medium heat for 30 seconds per side until fragrant, then soak in 1.5 cups boiling water for 15 minutes.
  3. Drain the chiles and blend with 1 cup of the chicken broth, garlic, chopped onion, cumin, and 1 teaspoon salt until completely smooth; strain through a fine mesh sieve into a bowl, pressing to extract all liquid.
  4. Heat 1 tablespoon oil in a saucepan over medium heat, whisk in the flour, and cook for 1 minute until it smells nutty and no longer raw.
  5. Whisk in the strained chile sauce and remaining 1 cup chicken broth, bring to a gentle simmer, and cook for 8 to 10 minutes, stirring occasionally, until thickened enough to coat the back of a spoon. Taste and adjust salt.
