Method
- Preheat the oven to 350F and line a rimmed baking sheet with foil, or lightly grease a 9x5-inch loaf pan.
- In a small bowl, soak the breadcrumbs in 2/3 cup milk for 5 minutes until softened.
- In a large bowl, combine the ground beef, soaked breadcrumbs, eggs, diced onion, garlic, Worcestershire sauce, 1.5 teaspoons salt, and 1/2 teaspoon pepper.
- Mix with your hands just until combined; overmixing will make the meatloaf dense and tough, so stop as soon as the ingredients are evenly distributed.
- Shape the mixture into a 9x5-inch loaf shape on the prepared baking sheet or press into the loaf pan.
- In a small bowl, whisk together 1/2 cup ketchup, 2 tablespoons brown sugar, and 1 tablespoon apple cider vinegar for the glaze.
- Spread half of the glaze evenly over the top of the loaf.
- Bake at 350F for 45 minutes, then brush with the remaining glaze and continue baking 15 to 20 minutes more.
- Check internal temperature with an instant-read thermometer in the center of the loaf; it is done when it reaches 160F.
- Let the meatloaf rest for 10 minutes before slicing, which allows the juices to redistribute so slices hold together.
