Method
- Season the chicken thighs on both sides with the salt and pepper.
- Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Sear the chicken thighs for 3 to 4 minutes per side, until golden brown (they do not need to be fully cooked yet). Transfer to a plate.
- Reduce heat to medium and add the onion to the same pot. Cook, stirring occasionally, for 4 to 5 minutes, until softened.
- Add the garlic and cook for 30 seconds, until fragrant.
- Stir in the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, smoked paprika, and chicken broth, whisking to combine.
- Bring the sauce to a simmer, then return the seared chicken thighs to the pot, nestling them into the sauce.
- Cover, reduce heat to low, and simmer gently for 25 to 30 minutes, until the chicken is very tender and shreds easily with a fork, and reaches at least 165F internally.
- Transfer the chicken to a cutting board or large bowl and shred it into bite-sized pieces using two forks, discarding any large pieces of fat.
- Return the shredded chicken to the sauce in the pot and stir to coat evenly; simmer uncovered for 5 more minutes to thicken slightly if the sauce seems thin.
- Taste and adjust seasoning with more salt, vinegar, or brown sugar as needed.
- Toast the hamburger buns lightly if desired, then pile the pulled chicken generously onto the bottom buns.
- Top each sandwich with a scoop of coleslaw and the top bun, and serve immediately.

- Chicken thighs stay much more tender and juicy than breasts when shredded; using breast meat here can result in a drier sandwich.
