Method
- Grease a 9x13-inch baking dish with butter or cooking spray.
- Heat a large skillet over medium heat and cook the 1 pound breakfast sausage, breaking it into crumbles, for 6 to 7 minutes, until browned and no pink remains (internal temperature 160 F). Use a slotted spoon to transfer sausage to a plate, leaving the fat in the pan.
- Add the diced onion and bell pepper to the skillet and cook in the sausage fat for 5 minutes, until softened. Remove from heat and let cool slightly.
- Spread half of the 8 cups bread cubes evenly in the prepared baking dish.
- Scatter half of the sausage, half of the onion-pepper mixture, and 1 cup of the cheddar cheese plus half the Gruyere over the bread.
- Layer the remaining bread cubes on top, followed by the remaining sausage and vegetables.
- In a large bowl, whisk together the 10 eggs, 3 cups milk, 1 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon mustard powder, and 1/4 teaspoon nutmeg until fully combined.
- Slowly pour the egg mixture evenly over the layered bread, pressing down gently with a spatula so all the bread gets moistened.
- Sprinkle the remaining 1 cup cheddar and remaining Gruyere over the top.
- Cover the dish tightly with foil or plastic wrap and refrigerate for at least 4 hours, preferably overnight, so the bread fully absorbs the custard.
- When ready to bake, remove the strata from the fridge and let it sit at room temperature for 20 minutes while the oven preheats to 350 F.
- Bake covered with foil for 30 minutes, then remove the foil and bake for another 25 to 30 minutes, until the top is golden brown, puffed, and a knife inserted in the center comes out clean (internal temperature reaches 165 F).
- Let the strata rest for 10 minutes before slicing so it sets properly. Garnish with chopped parsley and serve warm.
