Method

  1. Preheat the oven to 400 F and line a large rimmed baking sheet with parchment paper.
  2. Heat a large skillet over medium-high heat. Add the 1 lb ground beef and cook, breaking it up with a spatula, for 6 to 8 minutes, until no pink remains and it is browned.
  3. Drain excess grease from the skillet, then stir in the taco seasoning and 1/3 cup water. Simmer 2 to 3 minutes, stirring, until the sauce thickens and coats the beef; remove from heat.
  4. Spread the tortilla chips in a single, slightly overlapping layer across the prepared baking sheet.
  5. Scatter half the seasoned beef and half the black beans evenly over the chips, then sprinkle with 1 cup of the shredded cheese.
  6. Repeat with the remaining beef, black beans, and the remaining 1 cup cheese so every chip has toppings nearby.
  7. Scatter the pickled jalapeno slices evenly over the top.
  8. Bake for 8 to 10 minutes, until the cheese is fully melted and bubbling at the edges; watch closely after 7 minutes so the chips do not burn.
  9. Remove the pan from the oven and immediately scatter the diced tomatoes, red onion, and avocado over the hot nachos.
  10. Dollop the sour cream over the top in small spoonfuls and sprinkle with the chopped cilantro.
  11. Squeeze 2 to 3 lime wedges over the whole pan just before serving, with remaining wedges on the side.
  12. Serve immediately, straight from the pan, while the cheese is still melted and the chips are crisp.
