Method
- Preheat the oven to 350 F.
- Mix the graham cracker crumbs, melted butter, and 3 tablespoons sugar until evenly moistened, then press firmly into the bottom and up the sides of a 9-inch pie dish.
- Bake the crust for 8 to 10 minutes, until lightly golden, then cool on a wire rack while you make the filling.
- In a large bowl, whisk the egg yolks until slightly thickened, about 1 minute.
- Whisk in the sweetened condensed milk until smooth, then whisk in the lime juice and zest until fully combined and slightly thickened.
- Pour the filling into the cooled crust and smooth the top.
- Bake for 14 to 16 minutes, until the filling is set around the edges but still jiggles slightly in the very center.
- Cool the pie on a wire rack to room temperature, then refrigerate for at least 3 hours, or until fully chilled and set.
- Just before serving, whip the heavy cream with the powdered sugar to soft peaks and spread or pipe over the pie.
- Slice and serve chilled.
Tips
- The acid in the lime juice reacts with the condensed milk and egg yolks to help set the filling, but baking briefly ensures a fully set, sliceable texture.
- If you cannot find key limes, regular Persian limes work well and give a similarly bright, tangy flavor.
