Method

  1. Preheat the oven to 350 F.
  2. Mix the graham cracker crumbs, melted butter, and 3 tablespoons sugar until evenly moistened, then press firmly into the bottom and up the sides of a 9-inch pie dish.
  3. Bake the crust for 8 to 10 minutes, until lightly golden, then cool on a wire rack while you make the filling.
  4. In a large bowl, whisk the egg yolks until slightly thickened, about 1 minute.
  5. Whisk in the sweetened condensed milk until smooth, then whisk in the lime juice and zest until fully combined and slightly thickened.
  6. Pour the filling into the cooled crust and smooth the top.
  7. Bake for 14 to 16 minutes, until the filling is set around the edges but still jiggles slightly in the very center.
  8. Cool the pie on a wire rack to room temperature, then refrigerate for at least 3 hours, or until fully chilled and set.
  9. Just before serving, whip the heavy cream with the powdered sugar to soft peaks and spread or pipe over the pie.
  10. Slice and serve chilled.

Tips

  • The acid in the lime juice reacts with the condensed milk and egg yolks to help set the filling, but baking briefly ensures a fully set, sliceable texture.
  • If you cannot find key limes, regular Persian limes work well and give a similarly bright, tangy flavor.
