Method

  1. Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the onion, carrots, and celery, and cook, stirring occasionally, for 6 to 7 minutes, until softened.
  2. Add the garlic and cook for 30 seconds, until fragrant.
  3. Pour in the chicken broth and add the chicken breasts, bay leaves, thyme, salt, and pepper.
  4. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 20 minutes, until the chicken is cooked through and reaches 165F internally.
  5. Remove the chicken breasts to a cutting board and let cool slightly, then shred into bite-sized pieces with two forks.
  6. Discard the bay leaves. Bring the broth back up to a gentle boil over medium-high heat.
  7. Add the egg noodles and cook for 6 to 8 minutes, or according to package directions, until tender.
  8. Return the shredded chicken to the pot and stir to warm through, about 2 minutes.
  9. Taste and adjust salt and pepper as needed.
  10. Ladle into bowls, sprinkle with fresh parsley, and serve hot.

  • Poaching the chicken directly in the broth infuses the whole soup with flavor, so do not skip cooking the chicken this way rather than separately.
  • If making ahead, cook the noodles separately and add them to individual bowls before ladling in the soup, since noodles left sitting in broth will absorb liquid and turn soft.
